Chicken Tinola Recipe

Chicken Tinola is actually a chicken soup with ginger. It is best served during cold and rainy weather because of its warming effect. You can either use chili or malunggay leaves depending on their availability.



Chicken Tinola


Ingredients

  • 1 whole chicken, cut into serving pieces
  • 5 cups of water
  • 1/2 pc small green papaya or 1 big chayote, peeled and sliced into wedges
  • 1 tbsp garlic, minced
  • 1 medium sized onion, chopped
  • 1 thumb ginger, cut into strips
  • 2 tbsp fish sauce
  • chili leaves (dahon ng sili) or malunggay leaves

Cooking Procedure

  1. Sauté the garlic, onion, and ginger.
  2. Add the chicken and cook until color turns light brown
  3. Add the fish sauce and mix well.
  4. Pour in the water and bring to a boil. Simmer until chicken is tender or approximately 45 minutes.
  5. Add the green papaya wedges and simmer for 5 minutes
  6. Add the chili / malunggay leaves
  7. Add salt and pepper to taste
  8. Serve hot and enjoy!
