While checking on my Facebook, I saw one of my friends "liked" the Chicken Tocino from Del Monte Kitchenomics page. I immediately saved the link because I know someday, I'm gonna try that recipe. Sam loves chicken! After a day or two (or three, whatevs), I checked out the recipe and was so delighted to see how easy the recipe is! Really... I should try!

To add more flavor, I tweaked the recipe a li'l bit by adding 1/2 to 1 tbsp of soy sauce.
Chicken Tocino
Ingredients:
½ kg chicken breast fillet
⅓ cup brown sugar
¾ cup Del Monte 100% Pineapple Juice
2 tbsp banana ketchup
¼ teaspoon iodized fine salt (or ¼ tablespoon iodized rock salt)
1/8 teaspoon pepper
1/2 to 1 tbsp of soy sauce
Procedure:
1. Pound chicken to flatten. Set aside.
2. Combine brown sugar, salt, pepper, soy sauce, pineapple juice and banana ketchup.
3. Marinate chicken in the mixture overnight in the refrigerator.
4. Pan grill or pan fry in 1/3 cup oil. Slice into strips and serve.
Makes 6 servings!
I really love this tocino recipe. Aside that it's so easy to make, it doesn't have the chemicals usually found in the tocino recipes.
Mommies, this is perfect for your kids' baon! I'm they sure, there will be no leftovers. Hehe...
And I wonder, have you already tried eating tocino with calamansi dip (freshly squeezed calamansi extract/juice, salt and garlic)? Not yet? Just with vinegar? Why don't you try it... and then let me know if you like it.
