Cheesy Eggplant Carbonara

So, I saw this easy Cheesy Eggplant Carbonara recipe on Facebook and I had the chance to cook it while the hubby is vacationing here.

I must agree that the dish is really so rich and creamy, and of course, cheesy, HEHE... It reminds me of pizza and pasta carbonara in every bite and sure thing it becomes an instant hit!

Here's the original recipe:


Cheesy Eggplant Carbonara

 

Ingredients:


4 pc (800 grams) eggplant (each sliced lengthwise into 4)
1 pc egg (lightly beaten)
½ cup breadcrumbs
1 ¼ tbsp grated cheese
1 pc (medium) green bell pepper (diced)
1 pouch (200 grams) Del Monte Carbonara Sauce


Procedure:


1. Mix eggplant with egg, then coat with breadcrumbs. Fry until golden brown. Set aside. Remove oil from pan.

2. Using the same pan, arrange half of fried eggplant slices to cover bottom of pan. Season with salt and pepper to taste. Spread half of DEL MONTE Carbonara Sauce over eggplants. Top with half of cheese and bell peppers.

3. Repeat procedure using the remaining ingredients. Cover and simmer for 3 minutes or until cheese melts. Or use 7”x7” pan and bake in an oven at 350F for 15 minutes.

Makes 5 servings!


And oh, did I mention that I have added fried chicken strips? No? Since, there's a fried chicken leftover from our recent takeout from Chowking, I've decided to add it to the dish to make it even more special.
